Easy Change of Pace pizza

1 pound small red potatoes, sliced VERY thin

6 Tablespoons extra-virgin olive oil

½ small red onion, sliced THIN

½ teaspoon minced fresh rosemary

1 cup crumbled goat cheese (feta)

Salt and pepper

**1 (1 pound) ball pizza dough (or pizza crust already made)


Put oven rack to upper-middle position and heat oven to 500 degrees. Toss potatoes with 1 Tablespoon oil in large microwave-safe bowl. Cove tightly with plastic wrap or microwave safe lid and microwave on high power until potatoes are just tender 4 to 7 minutes.


Combine 2 Tablespoons oil, onion, rosemary, goat cheese and salt and pepper to taste in a bowl while potatoes are cooking. Brush 2 tablespoon oil over rimmed baking sheet. Roll out dough ball on floured work surface until about 16 by 9 inch oval or use ready made pizza crust.


Scatter potatoes in single layer over dough and top with onion mixture. Drizzle remaining oil and season with salt and pepper.


Bake until onions are soft and edges of pizza are well browned, about 15 minutes.  Cut into wedges and serve.  ** Pizza can be made Gluten Free by buying Gluten free pizza crust.
