Fresh Beet Preparation

 

The usual way to prepare fresh beets is to leave enough of the top on so they do not “bleed” and boil until tender in water to cover. When done, plunge them into cold water and skin. Serve whole or sliced, with salt pepper and butter to taste or make a vinegar, sugar, salt, and pepper vinaigrette to cover. Serves 4

 

Another way to serve:

4 beets sliced

¼ stick butter

½ cup orange juice

3 Tablespoons brown sugar

Melt butter in heavy frying pan, add sugar and orange juice, let simmer until sugar is dissolved. Add beets and stir around until coated with mixture. Keep heat on low and let beets cook until sauce becomes syrup and beets look glazed. Serve hot, pour pan sauce over beets.
