Macaroni and Cheese can be a main course, a side dish or just a snack.

Easy to make, it has become one of the popular dinners everyone can relate too. To make a good Macaroni and cheese, start with a basic Roux by following these directions.

Sauté One Tablespoon of Butter until melted, add One Tablespoon of flour in a pan and blend to a smooth paste. Add 1/4 teaspoon salt and 1 cup of milk.

You have now made a white Roux and gently eased into a white sauce Béchamel as it is called. To this white sauce, add the cheese of your choice-from ½ cup to a cup depending on what you like. You now have cheese sauce.

In a separate pan, boil water, add 8 ounces macaroni, cook until al dente or to the bite. Drain the Macaroni and add to the Cheese sauce. If it is not creamy enough, add more milk.

Brown the Macaroni and Cheese in the oven after sprinkling some paprika on top. Serve with a salad and serve.
