Zucchini sautéed with Garlic

 

With fresh squash so abundant, recipes are becoming more requested.

 One of the favorite, simple recipes is to take:

 

 6 Medium size zucchini

2 Tablespoons Olive Oil

½ Teaspoon Salt

4-6 Garlic Cloves, Minced

1 teaspoon dried Thyme

1 Tablespoon fresh Lemon Juice

Black Pepper

 

Trim the ends of the Zucchini halve and quarter them. Cut into ¾ inch slices.

 

Heat the oil, add Zucchini and toss to coat evenly. Add salt and stir, then cook until browned on one side, about 5 minutes.

 

  Add the Garlic and Thyme. Shake the pan and sir with a wooden spatula. Continue cooking until golden brown on both sides and tender, about 5 minutes more. Do not let the garlic burn

 

. If you need to, reduce the heat and increase the cooking time.  Stir in the lemon juice, add lots of pepper and serve.
