Aunt’s Shrimp Grits

Salt and pepper

1/4 cup butter

1 cup Grits (stone ground is best)

2 cups shredded Cheddar cheese (or favorite with a bite!)

1 pound shrimp, peeled and cleaned, chopped if medium or large

6 slices bacon, chopped into tiny pieces after frying.

2 tablespoons chopped fresh parsley

1 cup thinly sliced green onions, white and green parts

1 large garlic clove, minced or 2 tablespoon dried garlic.

3 teaspoons fresh lemon juice

Bring 2 cups water and 2 cups of Milk to a boil. Add the grits, salt and pepper to taste. Stir with a whisk. Reduce the heat to low and cook the grits until done, about 10 to 15 minutes. Remove from heat and stir in butter and cheese. Cover until ready to serve.

Wash the shrimp and dry. Fry the bacon in a skillet until crisp, then drain. Add the shrimp to the bacon grease and sauté over medium heat just until they turn pink, about 3 minutes. Do not overcook! Immediately add the lemon juice, parsley, green onions, and garlic. Mix together, Remove from heat.

3. Pour the grits into a bowl. Pour the shrimp mixture over the grits. Garnish with the bacon bits.

This will serve 4 as a main course or will serve more if you make small appetizers.
