CHICKEN CASSEROLE

 

4 boneless skinless Chicken Breast

2 medium potatoes

2 zucchini squash (peeled or unpeeled

1 large sweet potato

1/2 cup Bread Crumbs (Seasoned or not)

Parmesan cheese-1/2 cup

Olive oil   1/2 cup

 

Garlic to taste

Pepper

Salt

 

In skillet with a small of amount of olive oil to coat, brown chicken

Until no longer pink in the middle

Sprinkle the garlic, pepper and small amount of salt on chicken

 

In a casserole dish, coat bottom with olive oil

Dice potatoes, (both types) squash and place in dish.

Cut chicken into medium size pieces: add to dish

 

Sprinkle 1/2 cup parmesan, 1/2 cup bread crumbs

And 1/3 cup olive oil on mixture, stir and toss Ingredients.

 

Place in a preheated 400 degree oven and bake an hour

Or bake until potatoes are cooked.

 

Stir approximately every 15 minutes.

 

 

Additions that could be made

1 can Mushroom Soup (+ ¼  can water)

1 Large onion-diced

1 red bell pepper diced

1 Carrot diced
