Easy Topped Crostini

Crusty bread sliced as thinly as possible

2 tablespoons extra-virgin olive oil

Salt and freshly ground pepper

2 tablespoons freshly grated parmesan optional

Brush the bread on both sides with the olive oil and season lightly with salt and pepper. Arrange on a baking sheet and bake until crusty and brown, about 10 to 12 minutes. Turn once about halfway through cooking, add Parmesan, if using. Bread can be cooled to put topping on or frozen until needed.

A favorite topping is roasted red peppers and Mozzarella.

Green peas blended with real bacon, parmesan, olive oil, and garlic is another favorite.

A cucumber, sour cream, green onion, blended together is also good to top the Crostini.
