Mexican Lima Beans

Baby Lima Beans/Pepper
1 (10 0z) frozen lima beans
or leftover lima beans.
3 Tablespoons olive oil
1/2 cup green pepper cut into strips.
(can also use frozen pepper medley)
1/4 cup red pepper cut into strips.
1/4 cup onion finely chopped.
Cook beans in boiling salted water
until tender. Drain and keep warm.
heat oil in small skillet. Add green pepper,
red pepper (or Medley) and onion. Sauté 5 minutes,
add the lima beans gently to the mixture.
Serve immediately while hot.
